Spiced Pumpkin Pie Recipe


Pumpkin season calls for pumpkin pie. I am not a pumpkin pie person, but this recipe has found a spot in my taste buds, and the whole family got infected. Be careful as it might infect you too but in a no guilt kind of way. Now let’s get to it!

Ingredients:

Crust

  • 1 cup quick or rolled oats
  • 1 cup pitted dates (10 large ones)
  • 1 1/4 pecan nuts
  • 1/4 tsp. sea salt

Pie Filling

  • 1 cup pumpkin puree
  • 3/4 cup cashew nuts (soaked for 8 hrs or overnight)
  • 1/3 cup soy milk unsweetened and non-flavoured
  • 1/4 tsp agave syrup
  • 1 Tbsp. arrowroot powder
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon powder
  • 1/2 tsp. vanilla extract
  • 1 Tbsp. lemon juice
  • 1/4 tsp. sea salt

Pumpkin Spice

  • 1 tsp ground cinnamon
  • 1/4 tsp. ground ginger
  • 1/4 tsp ground nutmeg
  • 1/8 tsp. ground cloves

Method:

Warm up the oven to 350 F.

Put all the pumpkin spice ingredients and mix and done! Ready to spice up your pumpkin pie.


The Crust

Put all the crust ingredients into the food processor and run until the texture looks doughy, about 1 min run time. When done, transfer it to a 9-inch baking dish lined with parchment paper. Spread the mixture evenly and press it down at the bottom of the dish evenly to form the pie dish shape. Cut around the parchment for a clean look. Place it aside while we prepare the filling.

The Filling

To make the pie filling, put all the filling ingredients into the blender. Run the blender until the texture is smooth and Pour it into the prepared pie dish.

We bake it for 35 mins or until the pumpkin is golden brown. If the middle is still soft, it’s okay as it gets hardened as cools down. Once cooled down, the pie is ready. You can serve it as-is or with ice cream.
